Snapper on Pineapple Sambal

Serves 4; Prep: 10 mins; Cook: 8 mins; Nutritional Value: High in protein, low GI, gluten free

Ingredients:
4 x 200g snapper fillets
olive oil
salt and freshly ground black pepper
½ pineapple
1 small red onion, finely chopped
2 tsp garlic, crushed
2 tbsp lime or lemon juice
1 red chilli, chopped-or to taste
2 tbsp fish sauce
2 tbsp shredded coriander leaves
2 tbsp olive oil

Method:
Trim the fish fillets if necessary, season them well and lightly drizzle them with olive oil.
Pan cook them over a medium heat until they are brown on both sides and just cooked through.
Leave in a warm place to rest for two minutes.
Meanwhile peel and core the pineapple and cut into small dice.
Combine with the onion, garlic, lime or lemon juice, chilli, fish sauce, coriander leaves and oil.
Check the seasoning and serve a portion of this on each fillet of snapper.
Steamed rice would be the perfect accompaniment to this dish.
