Ingredients:
600g Chicken breast fillet, skin off, cut into pieces
2 Red capsicums, cut into 3cm cubes
1/2 x 35g Sachet taco seasoning
Salsa
2 Corn cobs
1/4 Avocado, finely chopped
3 Spring onions, finely chopped
250g Cherry tomatoes, chopped
200g Mild taco sauce
Method:
Thread chicken and capsicum onto 8 bamboo skewers.
Sprinkle evenly with taco seasoning and char-grill skewers until cooked through.
Meanwhile, char-grill corn cobs until browned all over.
Using a small sharp knife, cut corn from cobs.
Combine corn with avocado, spring onions, tomatoes and taco sauce in a medium bowl.
Serve skewers on salsa.
