Mandarin and Mascarpone Tarts

Prep: 10 minutes; Nutritional Value: High in calcium and Vitamin C

Ingredients:
12 pre-baked small tart shells from your local IGA supermarket
250g cream cheese or ricotta cheese
1 tbsp sugar
vanilla essence
3-4 mandarins, peeled and as much pith removed as possible
½ cup apricot jam, warmed
icing sugar

Method:
Combine the cream cheese and sugar together.
Place a spoonful of this in the base of the tart shells and smooth them off.
Arrange the mandarin segments on top.
Then brush the tarts with the apricot jam and lightly dust with icing sugar.
