Ingredients:
1 loin of pork, approximately 1.5 kilo
2 tbsp Dijon mustard
2 tbsp grated horseradish
salt and freshly ground black pepper
5-6 rashers bacon, rind removed
4 medium potatoes, peeled and sliced
2 onions, peeled and sliced
2 tbsp olive oil
Method:
Smear over both the mustard and the horseradish and season well.
Lay out the bacon rasher, slightly overlapping and place the loin on this.
Roll up neatly to encase the loin.
Place the potato, onion slices and oil in a baking dish and season well.
Toss together so all are coated.
Place the pork loin on top and bake in a 180C oven for 40-50 minutes or until the bacon is well browned and the pork is almost cooked through-this will vary according to the thickness of the loin.
Rest in a warm place for fifteen minutes before carving and serving with a portion of the vegetables
