Serves 4; Prep:10 mins; Cook: 10 mins; Nutritional Value: Low GI, high in Vitamin C
Ingredients:
2 corn cobs
250g rindless bacon rashers, each rasher cut into three
1 red onion, cut into rings
1 tbsp olive oil
4 sections Turkish flat bread or 4 round buns
handful cos lettuce leaves
1 tomato, sliced
firm but ripe avocado, sliced
2 tbsp lime juice
salt and freshly ground black pepper
sweet chilli sauce
coriander leaves
Method:
Zap the corn cobs for four minutes on high.
Then remove the sheath and the silk.
Using a sharp knife remove the kernels in long sections.
Fry the bacon in its own fat until it is crisp.
Then drain and keep warm.
Alternatively cook it on the barbecue.
Cook the onion on the barbecue plate if using that or cook the slices in a small amount of oil in a frypan until soft but not coloured.
Warm or toast the split bread sections and lay the ingredients on in the following order; lettuce leaves, tomato slices, corn, onion rings, avocado slices, lime juice, seasoning, sweet chilli sauce, bacon and coriander leaves. Enjoy.
